INGREDIENTS
1. Chana Atta (Bengal Gram flour) with husk ½ kg
2. Jau
(Barley) Atta with husk ½ kg
3. Ragi/Mandva
( Finger Millet) Atta ½ kg
4. Soyabean
Atta ½ kg
5. Oat Bran ½ kg
6. Bajra (Pearl
Millet) Atta ¼ kg
7. Jowar (Sorghum Millet) Atta ¼ kg

8. Methi Dana/Methre (Fenugreek) Seeds 100gms
9. Badi Saunf (Aniseed) 100 gms coarsely ground
10. Ajwain (Carom seeds) 100
gms (washed, cleaned and dried)
11. Dhania (Coriander seeds) 50 gms
crushed or pounded
METHOD
Mix all the
ingredients together and store in a jar.
Use it for
making a variety of rotis by mixing with any of the following items:
Grated gobhi
(cauliflower), chopped methi (fenugreek) leaves, boiled palak (spinach), grated
radish (mooli), boiled and crushed matar (green peas), boiled/left-over daal,
boiled keema, grated paneer (cottage cheese) etc.
In addition, do add a few
chopped green chillies, chopped onion, adrak (ginger), lahsun (garlic) for making healthy rotis.
TIPS & TRICKS
1. Please do NOT
add Makki ka atta (Corn/Maize flour) as it is very high in starch and has high glycemic index,
not good for diabetics/calorie-counters.
2. Making rotis with this atta can be a little tricky. One may make a ball of dough, apply a little oil on a Ziplock and pat the ball into a roti rather than rolling it with a rolling pin. Alternatively, one may add a little whole-wheat flour while kneading the dough.

Maa m...what is jowar and can it be added in this formula?
ReplyDeleteThanks Shoumi Dutta for pointing out. Jowar is also a millet and can be added in the flour for the diabetics as it has a low glycemic index. On your pointing out, I have added it above.

DeleteThe ingredients used above are low-glycemic in nature and hence supposed to be good for diabetics as they do not allow the blood sugar levels to shoot up sharply.
DeleteWeight reduction, however, is a result of calories input and output with individual metabolism as an important factor.
Having said that, it would be useful to know that any low-glycemic food keeps the hunger pangs comparatively low and is, therefore, good for reducing one's intake which may result in weight reduction.

ReplyDeleteYes. One may add some wheat flour if it is difficult to make pure millet rotis. But the comparative effectiveness may go down.

ReplyDeleteAll these three flours are equally easy to mix and roll. I do not know the purpose of your diet but an easy to roll and tasty option would be Wheat 50%, Chana atta 25% and barley flour 25%.

ReplyDeleteIn my opinion, it is all comparative. For a diabetic person, wheat is better than maida, suji, besan and rice. But chana atta, jau (barley) atta, oats and millets are better than wheat as their glycemic index is low.

ReplyDeleteYes. One can make roti directly with these items. However, I would also like to add that one can mix and match these items as per one's taste and requirements. eg., a person suffering from hyper uric acid need not add soyabean flour.

ReplyDeleteThe number of chapatis to be eaten depends upon your calorie intake requirements. For a highly diabetic person, one chapati per meal should be sufficient to take care of your carb requirements as this would be much thicker than the ordinary wheat chapati.
